Marie Sharp’s Africa
During a holiday visit to Belize, a small Central American nation sandwiched between the Caribbean Sea to the East and dense jungle to the West, I was privileged to eat like a local. Belizean cuisine is a reflection of the multi ethnic population and includes dishes like fry jack, rice and beans, salbutes, fish serre, panade, tamale and cochinita pibil.
Although these dishes originated from Myan, British, Mexican and Creole cultures the one common denominator on every table in every hotel and restaurant was Marie Sharp’s Habanero Pepper Sauce. As a family, we always eat like locals when travelling and Belize was no exception.
